IN A HOT NON-STICK PAN:
To serve the Cordon bleu soft and golden, place them with a drizzle of oil or a knob of butter in a non-stick pan and cook them, turning them often.
IN A CONVECTION OVEN:
Preheat the convection oven and place the Cordon bleu in a baking dish without condiments. Then put them in the already very hot oven and turn them halfway through cooking.
