Pancakes with Greek Yogurt, Cocoa and Orange Coulis

Description
Soft and fluffy, pancakes are a delightful treat perfect for starting the day with energy and sweetness. Wake up your taste buds with the pleasant contrast between the creaminess of Greek cocoa yogurt and the tanginess of the orange sauce!
Procedure
In a bowl, combine the egg whites, sugar, sifted flour, baking powder, a pinch of salt, Greek yogurt and oat milk. Mix everything together until you get a homogeneous dough. Cover with cling film and let it rest in the refrigerator for about 30 minutes.
While the dough is resting, grate the orange peel, trying to avoid the white part. Squeeze the juice from the fruit and pour it into a saucepan; also add the sugar and the peel.
Bring everything to a boil and cook until you get a syrup-like consistency. At this point, transfer the mixture to a bowl.
Prepare the topping by chopping the dark chocolate into flakes and combine it with the Greek yogurt. Incorporate the cocoa powder, mixing all the ingredients well until you get a uniform cream.
In a lightly greased pan, pour a ladle of dough, trying to form a disc of about 10 cm in diameter. When bubbles appear on the surface, flip the pancake to cook the other side as well. Continue like this until you finish the dough.
Garnish the pancakes with the dark chocolate Greek yogurt, the orange coulis, the hazelnut grains and some dark chocolate flakes.
