Today AIA wants to reveal to you the recipe of the Wellington Fillet, a preparation of English origin that requires the beef fillet to be cooked in a crust. As mentioned, this preparation has English origins and legend has it that its name is dedicated to Arthur Wellesley, Duke of Wellington from 1815. It seems that the Duke was a man with difficult tastes in the kitchen, who found satisfaction only once he tried this fillet in a crust, which then became his favorite dish.

The recipe of the Wellington Fillet is not difficult to prepare if you follow our instructions and it will allow you to bring to the table a second course full of taste perfect for family dinners or with friends. In a non-stick pan with a drizzle of oil, brown the fillet, which you will season with a drizzle of pepper and salt. Once it is cooked to the right point, brush the fillet with the mustard.

Clean the champignon mushrooms and cut them into slices that you will then put in the mixer and blend with a drizzle of oil to obtain a smooth and homogeneous cream.

With the help of cling film, wrap the fillet with the cream of champignon mushrooms and with the slices of raw ham. Cover with cling film and let it rest in the fridge for at least 15 minutes. Once the necessary time has passed, remove the fillet from the fridge and place it in the center of the puff pastry with which you will cover the meat.

Transfer the fillet to a baking tray covered with baking paper and brush the surface with the beaten egg yolk, taking care to make small perpendicular incisions on the puff pastry with the help of a knife. Bake in a preheated oven at 200°C for about half an hour.
