Procedure
Preheat the oven to 200°C. In a pan melt the butter and here brown the onion that you will have cut into thin slices.
Add the fillet that you will brown evenly on all sides for about 20 minutes then remove it from the heat and let it cool. Salt and pepper the fillet on all sides.
On a previously greased baking tray, spread the brisée dough and here place the fillet that you will wrap in the brisée dough that you will make sure to close well on all sides.
Make small cuts on the puff pastry and brush the surface with the yolk of an egg. Bake at 190°C for about 30 minutes until the dough has browned to the right point.
