Procedure
Blanch the spinach slightly in unsalted water (for 30 seconds), then drain and squeeze them well.
Pass the spinach in a pan with a scant spoonful of extra virgin olive oil and a fine chop of shallot.
After a couple of minutes, salt, pepper and add a pinch of nutmeg: stir and remove from heat.
Transfer the spinach to the blender with the ricotta and the grated Parmesan: blend at maximum speed until you have a smooth and homogeneous cream. Taste and, if necessary, adjust the salt.
Place two tablespoons of stuffing on top of a chicken slice, then close with another slice and roll up into a roll. Secure each piece with a toothpick.
