Plin Ravioli with Roast Sauce

Description
An original variant for a classic recipe of Piedmontese tradition: they are the Plin ravioli with a tasty sauce of BonRoll.
Making this dish will be very easy: you just need to prepare the BonRoll in a pan cut into slices, for a faster cooking, and use its sauce to season the famous ravioli. Do you want to make them at home too? Here you find some suggestions for a perfect result!
So here are the ingredients and procedure to prepare the Plin ravioli with roast sauce.
Procedure
Wash and cut into small pieces the carrot, the celery and the onion.
Cut the Classic BonRoll into slices of about 2 cm and brown them in a pan with a drizzle of extra virgin olive oil, one minute per side.
Blend with a glass of white wine, add the vegetables, cover and cook for 15 minutes on low heat pouring a little broth at a time and taking care to often turn the slices.
Once cooked, remove the slices of BonRoll from the pan and set them aside. Now you can cook the ravioli in boiling salted water.
In the meantime, filter the meat sauce eliminating the vegetables, add a teaspoon of flour and, stirring, slightly raise the flame: if necessary, lengthen the sauce with a little more broth or cooking water of the ravioli.
Then drain the ravioli and transfer them to the pan, letting them flavor in the BonRoll sauce: serve them immediately!
