The pappardelle with sausage and tomato are very versatile on the table: perfect for a formal family lunch, but also suitable for a quick dinner with friends.
Very often the pappardelle are confused with the tagliatelle, but while the latter have a width that does not exceed 8 mm, as the “protocol” Bolognese ragù imposes, the pappardelle are much wider and thinner.
The pappardelle with sausage and tomato can be considered, depending on the quantities, a first course or a generous single dish. In addition to the classic recipe of pappardelle with sausage sauce, you can recover any leftovers from the barbecue and prepare a good dish of pappardelle with grilled sausage and fresh tomato.
This dish is suitable for all seasons, you can include it in your autumn menus perhaps also adding some mushrooms, or present it among the summer recipes using fresh and sweet cherry tomatoes.

Procedure
Here you can find the recipe for fresh egg pasta, you just have to roll out the pasta very thin and cut it into strips 30 cm long and 3 cm wide.
Finely chop the shallot and let it brown with a drizzle of oil in a large pan. In the meantime, cut the sausage into slices and add it to the pan. Brown the sausage well and add the chili pepper (if you like) and the peeled tomatoes simply crushed with your hands. The tomatoes cut in this way will give your dish a decisive, rustic and even tastier character.
Adjust with salt and pepper and cook the sauce over medium heat for 15 minutes. In the meantime, boil the pappardelle in plenty of boiling salted water, cook them for a few minutes then drain them and dip them in the sausage sauce.
