Homemade Piadina with Turkey and Tuna Sauce

The piadina is nothing more than a sheet obtained from the dough of flour, lard, salt, yeast and water, a recipe born in Emilia-Romagna but now widespread throughout Italy (and famous in the world).
Originally, the piada was cooked on terracotta at high temperatures: today, the dough is simply cooked on steel or stone plates. At home, you will not need to have professional tools: you will just need to heat a non-stick pan very well to cook your piadina.
Also, for a lighter version, you can replace the lard with extra virgin olive oil: we guarantee that the result will always be excellent and the dough soft to the right point.

Procedure
First of all, prepare the dough for the piadinas: put the sifted flour in a bowl and slowly pour in the center, first the water and then the extra virgin olive oil, stirring.
Add salt to taste and then knead with your hands until you get a homogeneous, soft and non-sticky consistency. Divide the piadina dough into 4-6 balls.
Roll out each ball with a rolling pin until you reach the desired size and thickness, then heat a griddle or non-stick pan well and start cooking one piadina at a time.
When the first bubbles form on the dough, turn the piadina and let it cook for 2 minutes: then, remove it from the heat and proceed with all the others, transferring them one on top of the other on a plate, in order to keep them all warm.
You can then proceed with the filling: put a spoonful of stracchino on each piadina and spread it well; add the turkey slices, the lettuce, a few slices of tomato and - lastly - the tuna sauce (if you want to make it at home, here is a very quick recipe).
