1 level tablespoon of Taggiasca olives

Description

Great for flavoring sandwiches and for stuffing crispy bruschetta, the chicken pâté is perfect for an aperitif or an elegant and tasty appetizer! The chicken pâté can be prepared with livers or with the breast, the result is different in taste, but always tasty and flavorful.

Here's how to prepare a perfect chicken pâté!

Procedure

Boil the chicken breast in slightly salted boiling water. Once cooked, cut the chicken breast into cubes and place it cold in the mixer glass. Trim the spring onion and cut it into slices, desalt the capers and pit the olives.

Add all the ingredients to the mixer and blend until you get a compact and homogeneous pâté. Add a sprig of rosemary, 1 level tablespoon of desalted capers and a few leaves of parsley.

Suggestions

If your chicken pâté should turn out too dry, dilute it with a few tablespoons of chicken broth. Add a spoonful of mayonnaise or mustard to the pâté if you like!

Another way to prepare chicken pâté is with livers. In a pan, fry a chopped half onion in extra virgin olive oil, add then 300 gr of chicken livers and brown them well then deglaze with half a glass of white wine.
