300 g of 00 flour
150 g of sugar
150 g of butter
The zest of half a lemon
Vanilla extract
A pinch of salt

Who said that Carnival masks can only be worn? Here is an easy and quick recipe for delicious cookies shaped like Carnival masks, all to be nibbled on.

The Carnival masks, in fact, are nothing more than excellent cookies made with shortcrust pastry, crumbly and tasty, created simply using mask-shaped sweet molds.

Procedure

To make a perfect puff pastry, start by pouring the flour on a work surface making the classic fountain shape.

With your hands or with the help of a spoon, make a hole in the center and pour in the sugar, the grated lemon zest and the salt.
Start working the dough with your hands, then add the cold butter in pieces and a few drops of vanilla essence, then add a whole egg and a yolk and continue to work the dough until it is soft and homogeneous.

Once ready, wrap it in cling film and put it in the fridge: for a perfect result, let it rest for at least thirty minutes before using it.

When the dough is ready to be used, remove it from the fridge and leave it out of the film at room temperature for a few minutes.
Sprinkle the work surface with a little flour and roll out the shortcrust pastry with a rolling pin, without making it too thin.

Now make the cookies with the mask-shaped molds and place them well spaced from each other on a baking tray covered with baking paper.
Bake at 170°C for 10-15 minutes, or at least until the cookies are well golden.
