Turmeric Chicken and Carrots

A colorful and tasty dish suitable for every season of the year.
Procedure
Chop the herbs, then peel and grate some ginger. Prepare the juice by squeezing a lemon.
At this point you need to mix all the ingredients: chicken thighs, chopped herbs, grated ginger, lemon juice (keep the peel). Add a tablespoon of oil, a pinch of salt and a teaspoon of turmeric powder. Put on gloves to mix the ingredients, massaging the chicken. Let it rest for about an hour.
It's time to prepare the side dish: cut the carrots into strips and the red onion into rings.
Pour some oil into a pot and turn on the stove on low heat. Add the side dish and let it wilt. At this point add a ladle of water and two tablespoons of grainy mustard. Wait for the sauce to blend and turn off the heat.
In a new pot pour a drizzle of oil and brown the marinated chicken thighs. Add a ladle of water and grate some of the lemon peel you saved. After adding salt (to taste), let it cook over medium heat with a lid.
