50 g of yellow mustard seeds
80 ml of room temperature water
80 ml of apple cider vinegar
A level tablespoon of brown sugar
3/4 tablespoons of extra virgin olive oil

Put the mustard seeds in a bowl and add the apple cider vinegar. Let the seeds rest for a whole day, until they have absorbed all the liquid.

At this point you can proceed in two ways: with a mortar or with a blender.

Put the mustard seeds soaked in vinegar, water, a pinch of salt and brown sugar in the blender.
Blend until you get a thick mixture, add the oil and mix well.
