Learning to make stuffed artichokes is really simple and, once you discover the trick to prepare this recipe in an easy and quick way, you can have fun inventing many versions. The stuffing is all a matter of tastes and personal preferences, but the classic version of stuffed artichokes includes AIA Ground Beef or AIA Salamella Tip of the Knife, with cheese and bread crumbs. For a lighter version, you can also use AIA aeQuilibrium Oven Roasted Turkey or AIA aeQuilibrium Oven Roasted Chicken Breast, but if you are in the mood for pampering, the AIA Wudy will be perfect. Use the stuffed artichokes recipe for a family dinner, but also on an important occasion.
Procedure
Here's how to prepare stuffed artichokes: first of all, clean the artichokes by removing the outer and harder leaves, cut off the stem and remove the beard inside with a knife. With your hands, spread the artichokes well without breaking them, then put them in water with some lemon juice so they don't darken.
Beat the egg for a few minutes and add a tablespoon of Parmigiano Reggiano. Separately, soften the bread crumbs with a little milk, then squeeze it and add it to the egg.
Mix the mixture well and adjust the salt and pepper. To this mixture you will need to add the ground beef and work well with your hands to blend all the ingredients.
Set the stuffing aside and drain the artichokes by placing them upside down. Then arrange them in a pot that can also go in the oven and fill them with the stuffing inserting pieces of spicy or smoked provola.
Cover each artichoke with Parmesan or grated bread. Pour into the pot a glass of water, the clove of garlic and a little white wine. Sprinkle with chopped parsley and let cook with the lid on medium heat for 15 minutes.
After 15 minutes, season the artichokes with a drizzle of oil and move them to the oven to finish cooking at 200°C for about 10 minutes, until a crust has formed on the surface.
