Description

Jewish-style artichokes are a much-loved dish of our tradition. It was invented in Rome and is very popular throughout Lazio.

The recipe for Jewish-style artichokes comes directly from the Jewish custom of fasting completely for Yom Kippur, the Day of Atonement. At the end of this holiday, fried artichokes were eaten, which were cooked by housewives and therefore were called 'Jewish-style'.

Jewish-style artichokes are a delicious side dish, capable of bringing out all the aroma and flavor of artichokes. Here is the original recipe to prepare Jewish-style artichokes!

Procedure

After cleaning the artichokes thoroughly, immerse them in a basin with acidulated water, for at least 10 minutes. Remove them from the water, drain them, dry them and beat them against each other so that the leaves begin to open.

Heat oil in a pan in such a quantity that the artichokes are covered. Then immerse the artichokes and leave them in the hot, but not boiling oil (140/150 °C will be fine) for 10 -15 minutes, the necessary time for them to cook without becoming too soft.

To check the cooking, just prick the base of the artichoke with the prongs of a fork, if the fork penetrates the artichoke, you can remove it from the oil.

Let them cool, keeping them upside down on a tray for about twenty minutes and, with a fork, open the leaves from the inside out, like a flower, so that they take on the characteristic rose shape.

At this point, season the inside of the artichokes with salt and plenty of pepper and let them rest for a few minutes to make sure they are well flavored before cooking.

Sprinkle them with water (or white wine) and immerse them in the oil, slightly raising the temperature but being careful not to burn them. Remove them after about 1 minute and put them to dry on a sheet of absorbent paper.

Suggestions

The real Jewish-style artichokes are prepared using Roman artichokes, the mammole: this variety is characterized by a tender consistency and the absence of thorns or hairs. For this reason, the mammole are easier to cook and softer.

Alternatively, you can also use other types of artichokes, but be careful to clean them properly.
