1 rabbit
1 onion
1 clove of garlic
2 bay leaves
600 ml of white wine
Extra virgin olive oil
1 carrot
1 stalk of celery
Salt
Pepper
1 sprig of rosemary

Description

The marinated rabbit is the second course that pleases everyone at the table and proves to be the ideal solution for a Sunday lunch with family or fora dinner with friends.

Preparing the marinated rabbit will be simple if you follow our suggestions and, even the most clumsy in the kitchen, will be able to achieve results like real chefs!

So here is the complete recipe to prepare the marinated rabbit.

First of all, cut the rabbit into pieces, which you will put in a bowl and leave aside for a moment.

Now prepare the marinade: cut the onion into pieces, the celery and the carrot, then pour them into the bowl where you put the rabbit pieces. Add the other spices and aromas, mix all the ingredients well and then moisten everything with the white wine (the wine must completely cover all the rabbit pieces).

Cover the bowl with cling film and let it rest in the refrigerator to marinate the rabbit for about 12 hours.

Once the necessary time has passed, take one piece of rabbit at a time and place them in a fairly large colander, so that the marinade liquid can filter. Collect the filtered wine in a container and put the vegetables in a colander.

In a pan, pour 2 or 3 tablespoons of extra virgin olive oil and turn on the heat, then add the rabbit pieces to brown them well on all sides. You can now add the vegetables and aromas that you put in the colander and cook for about 10 more minutes, adding salt to taste. Mix the ingredients well.

Lower the flame and pour a few ladles of wine left over from the rabbit marinade. Now cover the pan with a lid and let it cook for about an hour.

Once the cooking is finished, remove the lid and let the marinated rabbit dry out to brown it slightly.
