The rabbit falls among the white meats: it is a meat with a very delicate flavor that for this reason goes perfectly with many ingredients. The bacon however has the undisputed advantage of making any dish unique: here then is the recipe for rabbit with bacon.
The recipe for rabbit with bacon is extremely easy and quick: rich in flavor, it is perfect for Sunday lunches or for a dinner with friends. The only doubt you will have to solve is the type of cooking: in the oven or in the pan? It depends on the type of side dish you want to accompany the rabbit with bacon: if you choose baked potatoes, you can cook the rabbit together with the potatoes. Alternatively, if you are thinking of accompanying the rabbit with bacon with fresh salad, you can also choose to cook it in a pan.
Procedure
If you have opted for oven cooking, turn it on to 180°C. Take the thighs and wrap them with one or two slices of bacon. Secure the bacon with a toothpick.
Pour a drizzle of oil on the bottom of the pan, place the rabbit on it and season it with another drizzle of oil, a pinch of salt and the peppercorns. Then add the white wine, the thyme and the garlic cloves. Clean these well and leave them whole. Then clean your hands following the tips to eliminate the smell of garlic from your hands.
If instead you want to proceed with cooking the rabbit in a pan, pour a drizzle of oil and heat it up. When it is hot, put the garlic cloves and the rabbit thighs: brown it for a few minutes on high heat, turning it a couple of times. Then add the white wine, let it evaporate and lower the heat. Then add salt, pepper and thyme and let it cook for about twenty minutes.
Serve the rabbit thighs with bacon just out of the oven directly from the cooking pan.
