This mix of light flavors of meat, yogurt sauce and vegetables will immediately transport you to a beach on a Greek island, to savor or perhaps remember a dream vacation.
First of all, let's start preparing the light Tzatziki sauce.
The Tzatziki sauce is probably the most famous Greek sauce in the country, but it is also commonly used in other countries such as Bulgaria, Albania and Cyprus. Depending on the region where the recipe is prepared, it takes on different variations, but the constant is the use of the three main ingredients: yogurt, cucumber and garlic.
The tzatziki sauce is usually served as a first course accompanied by bread or pita, or during the appetizer with olives and cheeses. But it is really a great accompaniment for meat and in this case for chicken skewers!
Procedure
To prepare the chicken skewers in tzatziki sauce, start with the sauce.
Wash and peel the cucumbers and peel the garlic. Cut the cucumbers and chop them to get a liquid consistency. Chop the garlic and add it to the cucumbers, then pour over the oil. Add the yogurt, dill and salt. Stir with a spoon until all the ingredients are well combined. Store the sauce in the refrigerator and use it to enrich your dishes.
This is the light version of the tzatziki sauce, but if you want to get a more thick and substantial sauce use half of the cucumbers, the whole yogurt or Greek yogurt and a tablespoon of mayonnaise.
At this point you can start preparing the skewers. Take the chicken breast, then proceed by cutting it into cubes no more than one centimeter per side.
In a separate bowl, in the meantime, put a couple of tablespoons of oil, a pinch of salt and pepper and the chopped garlic, then mix well until you form a fairly homogeneous ointment. Now skewer the chicken pieces on the skewers and brush them carefully with the just prepared dressing; cook them on the grill for the barbecue, or on a grill pan.
Once ready, present them on the serving dish accompanied by a spoonful or more (depending on taste) of tzatziki sauce.
