1 finely chopped garlic clove
30 g of juniper
30 g of black pepper in grains
A pinch of smoked paprika

The pastrami is a dish that finds its origins in Romanian cuisine, usually it is based on beef or pork, but thanks to its unbeatable taste, today chicken or turkey pastrami is also prepared.

The United States imported pastrami and prepare it by marinating the meat for a long time with aromatic herbs and spices, then the meat is barbecued very slowly. To prepare a great sandwich with chicken pastrami you can rely on oven cooking, so you can prepare it comfortably at any time of the year.

Roughly chop the pepper, garlic, juniper and add the ginger. You can also do this using a simple mortar. Put a saucepan on the fire with water, sugar and salt. Dissolve sugar and salt by stirring, then turn off the heat and let the syrup obtained cool down.

Arrange the chicken breasts on a baking tray and cover them with the now cold syrup and spices. Wrap the chicken in cling film and let it marinate in the refrigerator for 24 hours. After the rest time, preheat the oven to 200°C, remove the film from the chicken and drain it from the marinade.

Wrap the chicken breasts with aluminum foil and pierce it with the tines of a fork in several points being careful not to pierce the meat. Bake the chicken pastrami for 30 minutes, then turn it and continue cooking for another 30 minutes.

Remove the pastrami from the oven, remove the foil and let it cool before slicing it very thinly with the help of a slicer. Fill the buns with the chicken pastrami and accompany it with mustard: a winning combination!
