Procedure
Pour the extra virgin olive oil into a large casserole and sauté the vegetable mix together with the garlic; when the latter is golden, remove it and add the chicken.
Brown the meat well over high heat, then deglaze with the red wine. Lower the heat, add the butter and herbs, salt, pepper and finally pour a ladle of broth.
Turn the chicken pieces, gently stir the base and cook covered over low heat for an hour, taking care to add the broth little by little, moistening the meat.
If you like, you can also add mushrooms, potatoes or vegetables to taste to accompany your chicken.
