Procedure
After finely slicing the onion, remove the skin from the AIA chicken cut into pieces. In a casserole, pour a drizzle of oil, a knob of butter, add the onion and sauté for about 5 minutes over low heat. Then turn up the heat and add the pieces of chicken that you will brown well on all sides, adjusting with salt and pepper. Add a cup of vegetable broth and let it cook for about 40 minutes with the lid on.
In the meantime, squeeze a lemon into a bowl, filter the juice and add it to the 2 egg yolks. Emulsify well and set aside for a moment. Once the chicken is cooked to the right point, add the lemon juice with the yolks, let it thicken and serve still hot. Enjoy your meal!
