Procedure

Lay the bacon slices and the smoked scamorza cheese cut into slices on the slices of AIA chicken breast. Roll these up on themselves and secure them with a toothpick to form real rolls. In a bowl, pour the 00 flour, breadcrumbs, and Parmesan.

In another bowl, beat the eggs, seasoning with a pinch of salt and pepper. Dip your rolls in the flour, then in the beaten eggs, and finally in the breadcrumbs. Place the rolls in a baking dish covered with parchment paper and, after seasoning with a drizzle of extra virgin olive oil, bake them in a preheated oven at 180°C for about 20 minutes.
