Procedure
Remove the crust from the stale bread, cut it into pieces and let it soften in a bowl with the milk.
In the meantime, in a deep dish, beat the eggs with the grated cheese, the chopped parsley, salt and pepper; also add the well-squeezed bread and mix everything together.
Now heat a drizzle of extra virgin olive oil in a pan and pour in the egg and bread mixture, then cook over medium heat for 7-8 minutes, then turn it over with the help of a lid and let it brown for another 2 minutes.
