First of all, clean and cut the pumpkin (here's how to do it), then finely cut the beetroot with the mandolin and put both vegetables on a baking sheet covered with parchment paper (well spaced from each other) and then brush them well with a drizzle of oil.

Then bake at 180°C for about 12 minutes in a fan oven, then leave the vegetables for a few minutes in the turned off oven, slightly open, for another 2 minutes. In the meantime, heat the milk on the fire, then turn off and add the grated Parmesan - little by little - stirring constantly until you get a cream.
