There are many delicious sauces that you can comfortably make at home to enjoy something very tasty made with your own hands. In addition to mayonnaise (which you can also make with a blender), ketchup, tartar sauce and barbecue sauce, you can indeed have fun preparing the Bernese sauce. Tasty and really delicious, the Bernese sauce can be used to season homemade french fries, to stuff hot dogs and delicious hamburgers and it will be love at first taste!

Procedure
In a saucepan, pour the vinegar, the chopped shallots and a teaspoon of tarragon together with a pinch of salt. Once the amount of liquid has halved, remove the saucepan from the heat and strain the vinegar. Now in a casserole, whisk the extra fresh large AIA egg yolks and, little by little, add the strained vinegar. Once the mixture is frothy, put it in a bain-marie in hot water, continuing to whisk.
Then add, little by little, the butter that you have melted and work with the help of whisks until you get a smooth and homogeneous consistency. Pour the sauce just obtained into a bowl, add a pinch of pepper, tarragon, a few drops of lemon juice and enjoy!
