Procedure
Finely chop the onion and brown it in a pan with a drizzle of oil.
Add the diced tomatoes, adjust with salt and pepper and cook with the lid on for 10/15 minutes. Open the eggs and without breaking them, pour them into the sauce.
Add a sprig of thyme and wait for the egg white to set. Toast the sliced bread.
Clean an avocado and cut it into cubes, season it with a drizzle of oil, a few drops of lemon juice and ricotta flakes, then decorate with mint or basil leaves.
Melt the chocolate in a bain-marie. Cut the banana into slices and sprinkle it with the melted chocolate. Flavor the water with slices of lemon.
