Procedure
Separate the yolks from the egg whites; then beat the yolks for a long time with the sugar.
Add the sifted flour, the yeast and finally the milk. You should get a smooth and lump-free batter similar to that of crepes.
Separately, whip the egg whites until stiff and add them to the batter gently, stirring with a spoon always in the same direction.
Heat a non-stick pan and pour the batter with a ladle in the amount necessary to cover the entire bottom of the pan. Don't overdo the quantity, to avoid the pancake from being too high.
When bubbles start to form on the surface, flip the pancake and cook it on the other side.
If you don't have maple syrup, serve the pancakes with blueberry jam, then add the classic bacon or other cold cuts as you like.
Also put butter on the table and serve the pancakes with American coffee and orange juice.
