To prepare the mint frittata, follow all our tips and you won't go wrong. First of all, it's better to use room temperature eggs, so if you keep them in the fridge, take them out 20 minutes before starting the preparation.

In a large bowl, break the eggs and add the mint leaves broken with your hands, in this way they will release all their summer scent. Add the cheese and adjust with salt and pepper then beat the mixture with a fork or a whisk for a moment.

At this point let the mixture rest for 5 minutes so that the flavors blend well. Heat a drizzle of extra virgin olive oil in a pan and when it is hot, add the mint frittata mixture.

Let the frittata cook for a few minutes, then with the help of a lid turn it over and cook it on the other side. When the mint frittata is perfectly cooked, transfer it to a serving dish and decorate it with some fresh mint leaves.
