One brick of AIA aeQuilibrium Egg White
4 peaches
4 ice cubes
50 g of raspberries
150 g of sugar
Fresh mint as needed

Description

To end a family dinner in style, it takes little, even a simple peach cream to pair with the crunchiness of a delicate meringue: sweetness and lightness have never been so easy to prepare!

Procedure

Peel the peaches, cut them into pieces and blend them with the ice.

Divide the obtained puree into earthenware cocottes or heat-resistant single-portion glasses.

Rinse the raspberries and place them on the surface of the peach cream in each portion.

Now take care of the meringue: whip the egg whites adding the sugar a little at a time until you get a very firm mixture.

Put the meringue in a pastry bag and decorate the bowls previously filled with the peach smoothie and the raspberries.

Then put the glasses or cocottes on a baking tray and bake at 120°C for at least 45 minutes, in order to cook and color the meringue. Alternatively, you can use a pastry torch.

When the meringue is well browned remove the tray from the oven, let it cool and serve decorating with fresh mint leaves.
