First, separate the yolks from the whites and put the latter in the glass of a planetary mixer. Blend at medium speed and then pour a little powdered sugar into the mixer along with a few drops of lemon juice and whip the egg whites until stiff to obtain a frothy mixture. Now pour the rest of the powdered sugar into the mixer and with the help of a spatula gently mix with movements from the bottom up so as not to deflate the egg whites.

Now transfer the mixture just obtained into a piping bag and form many small tufts that you will place on a baking sheet covered with parchment paper. Now bake in a preheated oven at 80°C for about 2 hours so that they have time to dry out slowly.

Once the meringues are dry, remove them from the oven and let them cool completely before detaching them from the baking sheet and enjoying them!
