Procedure
In a bowl, put the yolks, add the sugar and whisk with an electric whisk until you get a foamy mixture. At this point add the butter at room temperature cut into pieces and mix it with the mixture. Sift starch, flour and yeast and gradually add them to the egg and sugar mixture, stirring constantly. Add the milk if the mixture is too dry.
Add the finely grated untreated lemon zest and whip the egg whites until stiff. Add the egg whites to the dough with slow movements from top to bottom to get an even softer Margherita cake.
Pour the mixture into a buttered and floured cake tin and level it with a spatula. Bake at 170°C for 60 minutes.
