Description

The recipe for light velouté with chicken bites is ideal for a tasty dinner that can warm us up after a long day of work. The pumpkin cream will pamper you with its sweetness: we then decided to enhance all its flavors, adding tender chicken bites.

Procedure
Cut the onion into chunks and blanch it in butter, with a little olive oil in a large pot. Cut the pumpkin (peeled) and potatoes into small chunks and add them to the onion.
Brown them quickly over medium heat. At this point add the broth until it covers the contents of the pot and cook until the potatoes and pumpkin have completely broken down (the advice is to cover the pot with a lid). It will take about half an hour.
In the meantime take the AIA Chicken Breast and cut it into many bites of the size you prefer, better if in cubes. Pour a drizzle of EVO oil into a non-stick pan and brown the bites (if you like you can first pass them in a pinch of flour).
Now take an immersion blender and put it directly in the pot where you cooked potatoes and pumpkin. Blend until you get a creamy and homogeneous mixture. If the consistency is too thick, add a little more broth.
Your chicken bites, after about 10 minutes in the pan, will have reached the right cooking point. You can then serve the velouté in the dishes adding a generous spoonful of grated Parmesan and a drizzle of raw oil. You can also add some chopped chili pepper.
