Procedure

Beat the eggs in a deep dish and pour some flour into another container, then beat the AIA Chicken Breast with a meat mallet and fillet it and then cut it into pieces more or less large according to your taste.

Pass the meat fillets first in the egg and then in the flour.

Pour the frying oil into a large enough pan - a wok will also do - and bring it to the right temperature to get a faster and lighter cooking, then put the chicken fillets to fry for about 5 minutes. Drain them and keep them warm while you prepare the lemon sauce.

Put the cornstarch in a container with cold water and mix well to eliminate all lumps. Heat a non-stick pan and pour in the mixture. Heat it for a minute then add the zest of half a lemon, the juice of a lemon, the sugar and the wine. Cook for a few minutes until the sauce begins to thicken.

Add the chicken fillets to the sauce, turning them and making them blend well with the seasoning. You will need a few minutes to heat the chicken.

To serve the lemon chicken, arrange the fillets on a nice serving dish and drizzle with the sauce.
