Procedure
The first thing to do to prepare curry chicken is the marinade: put the spices in a pan and toast them for a few minutes; then pour them into a bowl, adding a pinch of salt, pepper, curry and the Greek yogurt. Mix well until you get a uniform cream.
Cut the AIA Chicken Breast into cubes and immerse them in the marinade.
Mix well, cover with plastic wrap and let marinate in the refrigerator for a couple of hours. Then rinse the rice under water, pour it into a saucepan, adding the cinnamon stick, cardamom berries, star anise, coarse salt and water.
Cover with the lid and let it boil then lower the flame and cook for another 10 minutes. Cut the onion into slices, grate the ginger and cut the chili pepper and place them in a pan moistened with a drizzle of extra virgin olive oil, adding the crushed garlic.
Sauté and after a few minutes add the chicken with the marinade. Cook for about ten minutes and in the meantime chop the coriander which you will add at the end of cooking.
