In a bowl, add the sugar, sifted flour, salt and also the eggs, one at a time, stirring. Also add the milk and mix all the ingredients well until you get a smooth, lump-free batter.

After preparing the crepes, focus on the cream for flambéing. In a bowl, add the sugar, the softened butter and create a dough. Let it rest for 15 minutes and then add the orange juice.

In a pan, melt a tablespoon of sugar and the liquor, the zest of a lemon and the zest of an orange, then add the sugar and butter dough and bring to a boil. Once you have a sauce, put the crepes in the pan and let them soak well, then fold them in four.
