Procedure

Start by preparing the special dried fruit breading by chopping in the mixer the varieties you have chosen to use according to your taste: pistachios, almonds, hazelnuts, pine nuts, walnuts…you are spoilt for choice.

Add two scant tablespoons of breadcrumbs and mix well, then lay the breading on a plate.

Now take the chicken slices and pass them in the flour; in a bowl, break the eggs and beat them with a fork after pouring a tablespoon of water and salt and pepper lightly.

Quickly dip each slice in the beaten egg and then move on to breading with the mix of dried fruit.

Sear the cutlets a couple of minutes in the pan, then complete the cooking in the oven for 10 minutes at 180°C.
