Procedure
In a pot, start cooking the pasta and in the meantime grate the smoked scamorza. In a non-stick pan, fry the pancetta cut into pieces together with the extra virgin olive oil and once the pasta is cooked, pour it into the pan with the pancetta and sauté it for a moment.
At this point add the scamorza and mix well. In a baking dish pour the pasta that you will cover with a generous sprinkling of grated Parmesan cheese and some flakes of butter. Bake in a preheated oven at 200°C for about 10 minutes before serving.
