8 slices of very thin chicken breast
1 orange
1 lemon
1 clove of garlic
3 sage leaves
100 g of grated Parmigiano Reggiano
1 tablespoon of breadcrumbs
1 sprig of parsley
Extra virgin olive oil
Salt

Who says citrus says autumn and, despite these tasty fruits being very sweet in this season, they are also perfect for the preparation of salty recipes.

The autumn version of citrus chicken rolls are great for a quick and tasty second course that will satisfy all family members.

Procedure

Spread the very thin slices on a surface. In a bowl mix the cheese, breadcrumbs, a very fine chop of parsley, a grind of pepper and a pinch of salt. Put a spoonful of the mixture in the center of each chicken slice. Wrap the meat to form rolls that you will fix with wooden skewers or tying them with kitchen string.

Cut the orange and lemon in half, squeeze the juice of the two halves into a bowl and cut the other two halves into irregular pieces (after removing the peel). In a non-stick pan fry a clove of garlic and the sage leaves with a drizzle of oil.

Add the rolls and brown them well, then deglaze with the citrus juice and add the pieces of fruit previously cut. Let it cook for a few minutes adjusting with salt and pepper.
