To get great turkey skewers in teriyaki sauce, the secret is the marination of the meat. Cut the Turkey Fillet into cubes and put them in a bowl with the spring onion cut into rings. In a small pan, heat the mirin, sake, soy sauce and dissolve the sugar in it. Pour this sauce (teriyaki) on the turkey once it has cooled and let the meat marinate in the refrigerator, covered with film, for 30 minutes up to a maximum of 1 hour.
After the marination time, drain the meat from the marinade and thread it onto wooden skewers that you have soaked in cold water for 10 minutes. In this way, during the cooking phase, your skewers will not burn and will not become dark.
Heat the grill well and cook the skewers well until the meat is cooked. During cooking, brush the marinade on the skewers. Decorate the skewers as you like with black or white sesame seeds.
