4 round zucchinis
100 g minced pork
30 g of grated Parmesan
1 egg
Chopped parsley to taste

After washing the zucchini, remove the cap, thus obtaining a sort of hat. Incise the inner perimeter with the help of a knife and draw a cross in the pulp so as to extract it.

Hollow out the inside with the help of a spoon, taking care to leave about 1 centimeter of thickness. Season with a pinch of salt.

Now prepare the filling: in a bowl pour the minced meat, the sausage, the Parmesan, the chopped zucchini pulp, the beaten egg and the bread crumbs.

Add a pinch of salt and pepper and mix well until you get a homogeneous mixture. Pour a drizzle of oil on a baking sheet, stuff each zucchini with the obtained mixture and arrange them on the baking sheet, covering them with the caps obtained previously.
