Procedure
First of all, massage the chicken with salt, sage, oil and butter and then bake at 220°C for about 40 minutes.
In a bowl combine the crumbled chicken and pork sausages and mix them with Parmigiano Reggiano and beaten eggs. Stuff the chicken with the mixture of sausage, cheese and eggs.
Put the carrot, a chopped onion, a clove of garlic, a sprig of thyme and two bay leaves in a baking dish. Add a drizzle of oil and bake at 220°C for 15 minutes. After 15 minutes, add the wine, the tomato paste and simmer on the stove for about 40 minutes, at this point strain the broth with a very fine mesh strainer. Meanwhile, in a pan put the sugar and water and create a syrup to which you will add after 3 minutes two glasses of broth, the juice of 2 oranges and the finely chopped zest. Prepare the onions by putting the honey in a large pan, add the peeled onions and let them caramelize for a few minutes. Add the sugar, the balsamic vinegar and mix for 10/15 minutes.
Remove the chicken from the oven and sprinkle it with the obtained sauce, decorate with orange slices and sprigs of thyme.
