Sausage and Potato Meatballs
Ingredients
Description
The sausage and potato meatballs are a simple second course to make, but very tasty: children will go crazy for them and not only them... it's an ideal recipe for the whole family!
The sausage makes the meatballs very tasty, while the potatoes release a lot of softness inside, the result is dry and golden meatballs on the outside and with a very soft heart.
To make this recipe, Sweet and Savory by Miky used Sausages with turkey, chicken and pork AIA.
To make this dish you will need some experience in frying food, to avoid making it too heavy; you can also serve the sausage and potato meatballs with a fresh green salad, to forget about guilt!
If you really don't like fried food you can also bake the meatballs in the oven, perhaps pouring a drizzle of extra virgin olive oil on the baking tray, to make them golden anyway.
Procedure
Wash the potatoes, boil them and peel them. If you want to use the microwave to speed up: peel the potatoes, wash them well and cut them into cubes, put them on a plate and cover them with cling film, microwave them for 3 minutes.
Mash the potatoes with a potato masher or simply with a fork.
Pour the sausage and potatoes into a bowl, add the egg, the previously chopped garlic, a little rosemary, always finely chopped, but without exaggerating (it must not prevail over the other ingredients); finally adjust the salt and pepper and mix well.
Once everything is mixed, add the breadcrumbs, mix again and form the meatballs. Roll the meatballs in the breadcrumbs.
Pour plenty of oil into a large pan, put in some unpeeled garlic cloves and a few small sprigs of rosemary, this will further flavor our meatballs.
Once hot, fry the meatballs and drain them when they are nicely golden.
