Procedure
In a mixer chop the coarse salt, garlic cloves, oregano, bay leaves, sage and rosemary.
Place the whole AIA chicken on a baking tray and brush its surface with plenty of EVO oil and then cover the chicken with the chopped herbs previously obtained. Bake in a preheated oven at 200°C for about an hour. Halfway through cooking, remove the tray from the oven and turn the chicken on the other side, so that it cooks evenly on all sides.
