Start with the preparation of the spicy mayonnaise. Put all the ingredients in a bowl in this order: egg, oil, lemon (or vinegar), salt, mustard, paprika. Completely immerse the blender in the jug; it is important to touch the bottom. Operate at maximum speed and remain still in this position, until the sauce becomes clear and thick (it will take a few seconds). You will see that under the oil the mayonnaise will start to take shape and whip. At this point start to raise and lower the blender until the mayonnaise is whipped and thickened to the right point.

Fiber the stem of the asparagus and cut in half lengthwise the large ones. Heat the plate and cook the asparagus until they are cooked, but crispy.

Put the film on a saucer, grease it with oil and break the egg in the center. Close the film into a small package and put it in the pot of boiling water for 4 minutes until the egg white has set. Break the film and extract the egg. Arrange the asparagus on the plate and season with a drizzle of oil, salt and pepper. Put the poached egg on top and add the spicy mayonnaise.
