Procedure
In a pan, fry a clove of garlic in extra virgin olive oil, adding a sprig of rosemary and the crumbled Paesana Verzino AIA sausage.
Brown well and then deglaze with a little white wine.
Let the wine evaporate and add the tomato sauce, adjusting with salt and pepper. Soak the dried mushrooms in warm water and when they are soft, add them to the sausage sauce.
Boil the orecchiette in plenty of salted boiling water, drain them al dente and dip them in the sauce. Plate, adding a spoonful of sauce in the center.
