Omelette with broad beans and sausages
Ingredients
Description
The omelette filled with broad beans and sausages becomes a nutritious, tasty and protein-rich main course.
It's a fun way to serve eggs to children and above all a very quick dish to prepare for all sudden hunger attacks: here's the recipe!
Procedure
Take the broad beans and blanch them, in already salted boiling water, for about a minute. Drain them and let them cool in cold water, then peel them.
In a small pan, brown the sausages for 4 minutes, cut into 4 lengthwise and then into regular pieces, with a little butter.
Add the broad beans as well so that they are flavored with the butter and sausages. A couple of minutes will be enough.
For the omelette, beat the eggs just enough to break the yolks, but leaving the yolks and whites not completely mixed. Add the Parmesan, salt and pepper.
In a small pan, melt a knob of butter and add 1/4 of the beaten eggs. As soon as it has cooked, place the diced sausages and broad beans in the center and close the omelette by rolling it up on itself.
