First of all, wash the cherry tomatoes well, choose them so that one color does not prevail. Cut the tomatoes into quarters and arrange them in a bowl, then season them with three parts of extra virgin olive oil, one part of white wine vinegar, a pinch of salt and a few basil leaves. While the salad is marinating, dedicate yourself to cooking the Milanese.

To prepare The Milanese in the oven it will take only 8 minutes. Preheat the oven to 220°C, place The Milanese in a baking dish or on a tray covered with parchment paper and bake without condiments for 4 minutes. Turn your Milanese and continue cooking for another 4 minutes.

Cooking in the pan

In just 3 minutes, you will get a crispy and golden Milanese, here's how to do it. Heat a knob of butter or a drizzle of extra virgin olive oil in a pan, then add The Milanese and cook it for 3 minutes over high heat, turning it a couple of times.

Once The Milanese is cooked, season it with a pinch of salt and serve it hot with the colorful cherry tomato salad. To give the recipe a slight pleasantly spicy note, add a few fresh arugula leaves to the tomatoes.
