2 large leeks
3 slices of bacon
2 potatoes

Description

Winter is the season of leeks and comfort food: so here is a warm and tasty leek soup to bring to the table on cold winter evenings or, why not, also to warm up the lunch at the office. If you love winter soups and have no idea how to cook leeks, here is an easy delicious solution that everyone will like!

Procedure

First of all, trim the leeks and remove the green part and the outer leaves, then cut them into slices. Peel the potatoes and cut them into cubes, then cut the bacon into strips. In a large pan, brown the bacon until it is crispy, then set it aside. In the same pot, add a drizzle of oil and wilt the leeks for a few minutes. Add the potatoes, stir and cover with water or chicken broth

Adjust with salt and pepper and cook the soup for 20 minutes. After this time, blend everything with a mixer until you get a smooth and velvety cream. Alternatively, you can leave the ingredients whole. Serve the leek soup and decorate with the crispy bacon that you have slightly heated on the grill.
