Procedure
First, cook the AIA Classic Wudy on a hot pan for 4 minutes. In the meantime, finely chop the purple cabbage and season it with oil, salt and a splash of vinegar. Prepare the confit cherry tomatoes by cutting them in half and arranging them on a baking tray. Season the tomatoes with oil, salt, icing sugar and thyme. Bake the tomatoes for 60 minutes at 100°C.
Wash the lamb's lettuce well and cut the spring onion into rings. Cut the bread in half and toast the two inner parts. Fill the bread with the AIA Classic Wudy, the cabbage, the confit cherry tomatoes. Decorate with the spring onion, the lamb's lettuce and a sprinkle of fresh thyme. Season with a generous grating of salted ricotta. Add mayonnaise or yogurt sauce to taste.
