Very easy to prepare, Genovese chicken requires the use of very few ingredients and is as good as devil's chicken or hunter's chicken. Unlike the classic roast chicken, Genovese chicken is prepared in a pan like the more ethnic recipe of almond chicken.

For this recipe, you need a very large and non-stick pan. Heat a drizzle of oil in it and then add the chicken, making sure to leave a little space between each piece. Brown the chicken well until it is golden all over.

Add the garlic clove, the olives, the rosemary and the sage, stir and deglaze with the white wine. Let the alcohol evaporate, adjust the salt and pepper and lower the flame to a minimum.

Cook the chicken for about 40 minutes, turning it occasionally and adding a few tablespoons of broth or water if necessary.
