Crispy Chicken in Sweet and Sour Sauce

Description
For a party with friends, but also as a small appetizer or in a homemade finger food buffet, the crispy chicken is always good. It cooks in the oven in 10 minutes and remains light and crispy.
Accompanied with a spinach salad and a homemade sweet and sour sauce, it's the idea you needed to solve an evening with friends.
Procedure
To prepare the crispy chicken in sweet and sour sauce first turn on the oven and bring it to 200°C. In the meantime, prepare the sweet and sour red sauce. Wash the tomatoes well and blanch them to remove the skin.
Cut them in half and remove the internal seeds, then dice the tomatoes. Start frying the finely chopped carrot, onion and celery, the two cloves of garlic and the chili pepper in 4 tablespoons of EVO oil.
Add the tomatoes and then the vinegar, sugar and a pinch of salt. When the sauce is well cooked and flavored, blend it with an immersion blender. Add two tablespoons of oil and let it rest.
Arrange the chicken fillets in a baking dish and bake for 10 minutes, serve them very hot laying them on the fresh spinach salad and with the red sauce in a small bowl for dipping the fillets.
